Butter Balls (aka energy balls)

Hello again! Yesterday morning I was hungry as a bear and decided to whip up these quick 'n easy "energy balls". This recipe is very simple, and all you need is a food processor and freezer. Note: Toasting the coconut will make this even more delish, but is totally optional. I've had it both ways! I think Peanut butter tastes the best, but almond and sunbutter taste just fine.


  • 1 Cup Oats
  • 2/3 Cup shredded or flaked coconut 
  • 1/2 Cup Peanut, almond, or sunbutter. 
  • 1/3 Cup honey 
  • 1 teaspoon vanilla 
  • Chocolate chips (optional) 

In a food processor, combine all ingredients except chocolate chips. Chop until mixture begins to form a ball, or everything is evenly combined and chopped. Fold in chocolate chips and form into balls on cookie sheet or plate. Place into freezer to set for 20 Minutes! (More or less...depending on if you can wait, knowing those delicious things are just a few feet away) ;) haha! You can keep these in the freezer for a few days, even a week perhaps. (I wouldn't know, I eat them before a week passes) I encourage storing them in a container of sorts, unless you want icky yucky freezer "burnt" balls. :) Hope you guys enjoy this quick and easy snack.
