Pancakes & Curly haired little girls

Well hello there! Today I bring to you buttery, fruity goodness and pictures of cute little girls with curls.

It all started when I had nothing to cook for lunch, and a craving for waffles. So naturally, waffles came to mind! There were a couple of set backs, like the fact we were out of milk & somehow, our waffle iron wasn't turning my batter into waffles. But to a problem there is always an answer. (in my case, I learned you can use water, and a pancake grittle!) Thank goodness, otherwise I wouldn't have gotten to eat these bad boys for lunch. ;) hehe. Lucy especially was excited to eat pancakes. Probably because it doesn't happen very often that you get one of your favorite breakfasts for lunch.....ha.

Lucy's hair almost ALWAYS looks great, but today it looked even prettier, framing her face with golden curls. Gah! pure A.D.O.R.A.B.L.E.ness. :D Here's a few pics..and my recipe below!

Now isn't this picture the sweetest thing you've ever seen?!


1 1/4 cup brown rice flour
1/2 cup tapioka starch
2 teaspoons baking powder
1/2 teaspoon sea salt
2 Tablespoons granulated sugar
1/4 cup unsweetened applesauce
2 Tablespoons warm melted butter
1/2 to 3/4 cup milk (or water)

mix dry ingredients and wet ingredients in separate bowls. slowly stir dry into wet. stir until smooth. Pour evenly on hot grittle greased with oil of choice (I use coconut oil) or waffle iron. Flip pancakes when bubbly on top.

Berry sauce:
1/2 cup blueberries
1/2 cup strawberries
1/2 raspberries
(or fruit of choice)

Directions for sauce:
Pour berries in saucepan on MEDIUM to MEDIUM HIGH heat and let cook down to desired consistency. Pour over pancakes with butter (optional) and maple syrup (optional). ENJOY the deliciousness!
